Did you purchase currants, which will spoil soon, but you cannot eat them all at once? This happened to me recently when I got these lovely white currants from my grandma’s garden.
What to do with them? Make white/red currant jam with sparkling wine in order to keep them from going to waste. It can be enjoyed with almond icecream or yoghurt.
For the jam you need:
- 450 grams of white currants
- 250 grams of canning or preserving sugar
- 150 ml of sparkling wine
- 3-4 preserving glasses depending on the size you choose
Wash the currants and separate them from their stipes.
Put the currants in a bowl and add the sugar, then mix the two. Add some pressure while mixing in order to churn the currants a little bit. Then let the mix stand for about 4 hours.
After 4 hours, heat up the mix in a pot until it almost starts to boil. Then, pass the mix through a sieve and mix it with the champagne in a pot. Heat up the mix with the champagne and let it boil for about 5 minutes. Then, the jam is ready and can be filled into nice glasses, which you can find at kitchen, interior or decoration stores such as the Dutch Xenos or Blokker.
