Speculoos Spice Cookie Shake with Soymilk, Yoghurt, Dates and Honey

Hey everyone,

Christmas Season is definitely on and this means, we can treat ourselves with some yummy baked goods. I am definitely a baked goods lover and tend to over eat those during Christmas HAHA. So I had Speculoos Spice Cookies in my Sweets stack for a while now and I have not touched those in a while. Also I still had a lot of yoghurt left, which I wanted to use before it spoils. To make sure I make use of them I decided to try making a shake with those speculoos cookies. After all, this shake can be especially enjoyed during coffee and cake time but also in the morning when going to university or work Take a look at a picture of the shake below:

 

For the 2 portions of this shake you need:

Utensiles: a blender

  • 2 cups of crushed speculoos cookies
  • 2 cups of soy milk
  • 1 cup of yoghurt
  • 5 dates
  • 1 tea spoon of honey
  • EDIBLE: some crushed ice

 

Start filling the crushed speculoos cookies in a high metal pot and add the soy milk and yoghurt. Let the pot rest for about 5 minutes so that the speculoos cookies can suck up the soy milk and yoghurt. After those 5 minutes, add the dates and the honey. Now use a blender to blend the shake ingredients together until an even mixture emerges. Last but not least add crushed ice if you prefer the shake to be extra cold. Place the shake in cut Xmas glasses or take along bottles for uni /work and you are good to go!
