today I posted my super yummy Sunday breakfast on my Instagram feed. I made different bagel variations topped with Old Dutch Cheese or Soft French Chesse and figs, grapes or blackberries on top, along with arugula and pine nuts. This was a good way of using the almost spoiling arugula and the almost spoiling blackberries. The main idea here is, that there are NO RULES for the toppings. Put any kinds of leftovers on your bagels. It is just a great way of using food that would waste otherwise. Check out a picture of the bagels below:
For 2 bagels for 2 persons you need:
- 2 bagels
- different cheeses: e.g. French Soft Cheese and Old Dutch Cheese
- 1 cup of different leftover fruit : e.g. blackberries, figs, grapes
- 2 table spoons of pine nuts
- 2 hands full of arugula
Bake the bagels in the oven for about 10 minutes. After that, take them out and cut them into halfs, so that you get 4 bagel halfs.
Cut the cheeses into slices. Place a few arugula leaves on each bagel half and places the cheese slices on top. Cut the grapes and figs into slices and places them on top of the bagel halfs. The blackberries can just be placed on the bagel plain.
Roast the pine nuts in a pan for about 3 minutes until they turn golden brown. Now finally sprinkle them over the bagels and you are good to go !
