I also wanted to share the recipe of my breakfast from today. I used my watermelon leftovers to make chia pudding, which tasted so fresh. Check out a picture of my breakfast below:
For a portion for 1 person you need:
- 3 cups of watermelon chunks
- 1/3 cup of chia seeds
- 1/2 cup of oats
- 1 pear
- 1 hand full of blueberries
- 1 table spoon of bee pollem
The night before, blend the watermelon chunks into juice in a blender. Put them in a box and mix in the chia seeds and let them rest in a box overnight.
The next morning, fill the oats in the bottom of a deep plate and the watermelon chia pudding on top. Cut the pear into slices and if you want you can make cute shapes with baking forms like I did in the picture. Place them on the pudding along with the blueberries and the bee pollem.
