Argentinian Vegetarian Chimichurri with Soy Chunks, Sugar Snaps, Red Sweet Peppers, Bimi and Crushed Almonds

Hey everyone,

Today I posted a picture of the heavenly Chimichurri, which I made. Chimichurri is an Argentinian Sauce, which contains spices such as parsley, thyme, oregano and garlic. Usually it is used for steak and other types of meat but well, I made a vegetarian #nofoodwaste version of it. I actually bought a spice mix of Chimichurri (yes, shame on me for not making it fresh), but I found a recipe online for how to make chimichurri. If you prefer ready made mixes, you can also find them on markets, in spice shops or online on Amazon for example  here

For a portion for 2 persons you need:

Utensiles:

  • A blender

Ingredients:

  • 1 cup of rice
  • 2 cups of water
  • 2 hands full of sugar snaps
  • 1 red pepper
  • 1 hand full of bimi
  • 1 pack of soy chunks (usually 250-300 grams)
  • 1/3 cup of chopped almonds
  • 1 small onion
  • 1 garlic clove
  • A bit of oil
  • Sweet pepper spice
  • 1 tea spoon of pepper
  • 1 cube of vegetable spice/broth
  • 100 milliliters of water
  • Chimichurri Mix (if you prefer a ready made mix) OR

For the Chimichurri sauce I found this recipe on food.com :

  • 1 bunch of flat leaf parsley
  • 8 cloves of garlic, minced
  • 3⁄4 cup of extra virgin olive oil
  • 1⁄4 cup of red wine vinegar
  • 1 lemon wedge(or lemon juice)
  • 1 tablespoon of diced red onion
  • 1 teaspoon of dried oregano(optional)
  • 1 teaspoon of black pepper
  • 1⁄2 teaspoon of salt

Start cooking the rice in a pot with the 2 cups of water until all water has been absorbed.

In the mean time, start cutting the onion and the garlic clove and fry them in a pan with some olive oil. After a few minutes, add the soy chunks and fry them as well for about 10 minutes until the soy chunks have gotten some crunch. In the mean time, cut the edges of the sugar snaps off and the sweet pepper into small pieces. Add these together with the bimi to the pan to fry together with the soy chunks. Also, add the sweet pepper spice, the vegetable spice and the pepper. Fry these ingredients for another 5-10 minutes. After that, turn the fire of and let them rest.

Now make the chimichurri sauce:

If you bought the mix, then mix the quantity recommended on the package with the recommended amount of water.

If you want to make it fresh, which of course tastes much better, then start with putting the parsley in a blender to chop it. Once this is done, just add the other ingredients to blend together until you have an even mix.

 

Finally place the rice and the soy chunk, veggie mix on a plate. Pour the chimichurri sauce over the mix and finally sprinkle the almonds on top.
