today I posted a picture of a yummy bowl of fried rice with veggies and a fried egg. I made this meal with some leftover veggies, which I had left in my freezer and some almost spoiling bimi. The meal is super easy to make and rather quick. Check out a picture of the goodness below:
For a portion for 2 people you need:
- 2 garlic cloves
- a bit of sesame oil
- 1 cup of basmati rice
- 2 cups of water
- 200 grams Chinese vegetables such as red pepper, leek and Chinese cabbage
- a hand full of Bimi
- 1-2 eggs
- 2 table spoons of soy sauce
- 1/2 cube of vegetable spice
- 1 teaspoon of agave syrup
- 1 table spoon of curry spice
- 1 tea spoon of sweet pepper spice
Start with cooking the rice in a pot with 2 cups of water. In the mean time, cut the garlic cloves and start frying them in a big pan with some sesame oil. Cut the veggies into smaller chunks. Once the garlic is readily fried, add the veggie chunks to the pan and fry them for about 8-10 minutes while adding the soy sauce, the curry spice, the agave syrup and the sweet pepper spice. Once the spices have mixed well with the fried veggies, turn the fire down.
As soon as the rice is readily cooked, add it to the pan with the veggies and mix properly until an even mixture emerges and the rice has soaked up the spices properly. Add a bit of additional oil, so that the mixture starts frying properly. Stir it on medium fire for about 3-5 minutes, then turn the fire down and fill the rice into a big bowl.
Now start frying an egg and simply add some chili flakes on top and some more curry spice. Top it on the fried rice in the bowl. Finally take the bimis and sautee them in a pan for about 3 minutes on high fire with some sesame oil, salt and pepper, so that they keep some crunchyness. Place them on top of the fried rice next to your fried egg.
