Today I wanted to share the recipe for some delicious fruit tarts, which I posted on my Instagram feed. I made them with a creamy but light soy yoghurt topping and added figs and RAW/ NON DRIED Dates on them and bee pollem. Yep, my boyfriend found raw, non dried dates on the market and bought them. I was so curious how they would taste! The fruit tarts can of course be made with any kind of fruit and nuts or other toppings and you guys should use your fruit leftovers for them 😉 Check out a picture of the tarts below:
For 5-6 fruit tarts or one big 9-inch fruit tart you need:
- 8 tablespoons of melted unsalted butter
- 3 tablespoons of granulated sugar
- 1/4 teaspoon fine salt
- 1 1/4 cups of flour
For the topping:
- 2 cups of soy yoghurt
- 2 packs of vanilla sugar
- 1 vanilla
- 5- 6 figs
- 4 dates
- 1 table spoon of bee pollem
- Or other fruit of course !
Start mixing together the butter, the granulated sugar and the salt in a big bowl until an even mixture emerges. Then slowly add the flour and keep mixing until the flour is evenly incorporated in the mixture. Sprinkle a tiny bit of flour in the tart cup(s) and put the dough in the cups. Shape it into the cups with your hands, so that the typical tarte shape emerges.
Now put a sheet of plastic wrapper on top and let the tart pans chill in the fridge for about 30 minutes and start preheating the oven to 170° Celcius. After the tart pans are readily chilled, bake them in the oven for 20 minutes until they become golden brown. After they are baked, let them chill once again for about 20 minutes.
Fill the soy yoghurt in a bowl and mix together with the vanilla sugar and add the real vanilla extracts from the vanilla pod to it. Take the tart cups out of the fridge and fill the soy yoghurt mix in the cups.
Finally cut the figs into 4 and the dates into halfs and place them on the tarts. Sprinkle the bee pollem on the tarts and here you go !
