Lavender Rhubarb Crumble Sheet Cake

Hey guys,

We had a family birthday party last week and my grandma made an irresistible rhubarb crumble sheet cake. It was so delicious that I thought I should share recipe of it. My grandma got the recipe from the German Landluft Magazine. In fact you can use this recipe for any kind of fruit that you have. This crumble cake tastes good with cherries as well as with the classic apples. Check out a picture of the deliciousness below:

For 1 baking sheet of rhubarb crumble you need:

For the bottom layer:

  • 300 grams of flour
  • 1 pack of baking powder
  • 150 grams of soft butter
  • 150 grams of sugar
  • 1 pack of vanilla sugar
  • 1 egg
  • 2 egg yolks

For the topping:

  • About 1 kilogram of rhubarb OR other fruit

For the crumble:

  • 125 grams of flour
  • 100 grams of sugar
  • 100 grams of fluid butter
  • 1 pack of vanilla sugar

Finally:

  • Butter or oil for the baking sheet
  • Powdered sugar and a bit of lavender

Start mixing all the ingredients for the bottom layer together until they have become an even dough mixture. Fatten the baking sheet with the oil or butter. Then, spread the dough mixture of the bottom layer of the cake on the baking sheet.

Next, wash, clean and cut the rhubarb into small pieces and spread them over the bottom layer of the cake, which is already on the sheet. Pre-heat the oven to 170° Celsius.

For the crumble, mix together the flour, sugar and the fluid butter until they become an even mixture. Then crumble this mixture over the rhubarb pieces. Sprinkle the vanilla sugar over the rhubarb pieces separately.

Now put the sheet cake in the oven and bake it for 40 minutes at 170° Celsius. Once it is done, sprinkle some powdered sugar and and a few (not too many) lavendar blossoms over the cake and it is ready to serve.
