The same day I was going through my old posts, I also found a picture of another couscous salad that I made with green asparagus, kale, leftover strawberries, cashew nuts and carrots. The salad was spicy but still fresh because of the strawberries. I still remember how satisfying it was to eat this salad and therefore, I felt like I should share the recipe. For this salad for 1-2 persons you need:
- 1 cup of couscous
- 1 1/5 cup of water
- 8 asparagus (Stengel)
- 1 hand full of strawberries
- 1 hand full of cashews
- 1 onion
- 1 carrot
- 1 cup of kale
- 1 garlic clove
- 1 table spoon of sweet pepper spice
- 1 vegetable spice cube
- A bit of pepper and chili spice
- A bit of additional olive oil
- A few drizzles of balsamico
Start with cutting the onion and the garlic clove into small pieces and put them in the pan to fry until they become translucent. In the meantime, cut the carrot into thin slices and add it to the pan with the garlic and the onion pieces. Let the carrot fry for 10 minutes with occasional stirring until it has softened a little bit.
While the carrot is frying, boil water in a water cooker and put the couscous in a bowl. Once the water is boiling, pour it over the couscous and let the couscous rest in the water until it has soaked the water up completely.
Once the carrot has fried for 10 minutes you can add the kale along with the sweet pepper spice, the vegetable spice, the pepper and the chili spice. Keep stirring until the kale shrinks and add some additional olive oil to make the mixture a tiny bit crunchy. Then turn the fire off. Fill the mixture in a bowl along with the couscous from the bowl and mix them together.
Now start frying the green asparagus in a pan and also add the cashews into the pan to roast for about 5 minutes on medium-high fire. Just spice them with a bit of salt and pepper. Afterwards, top them on the mixture. Also, cut the strawberries into thin slices of small chunks and sprinkle them over the salad. Finally drizzle a little bit of balsamico over the whole salad.
