Green Couscous Salad with Soy- Rice Vinegar Dressing

Hey everyone,

Today I posted a green couscous salad, which I made last year. I went through old pictures in my Instagram feed and the salad catched my eye because I remember how amazing and light it tasted. So, I thought that I should share the super easy recipe. Check out a picture of this lovely green salad below:


For this salad for 1-2 persons you need:

  • 1 cup of couscous
  • 1 1/5 cup of water
  • 3 table spoons of rice vinegar
  • 1 yellow tomato
  • 1 egg
  • 1 avocado
  • ¼ of a cucumber
  • 1 hand full of parsley
  • ½ cup of yellow baby sprouts
  • 3 table spoons of soy sauce (or less depending on your personal taste
  • A bit of salt, pepper and chili flakes

Start with boiling water in a water cooker and fill the couscous in the salad bowl. Once the water is cooking, pour it over the couscous so that it covers the couscous and a fingertips width more. Let the couscous rest in the boiling water for 5 minutes until it soaked all of the water up. Once this is done, sprinkle the rice vinegar over the couscous and put a kitchentowel over the bowl so that the vinegar soaks into the couscous nicely.

While the couscous is soaking up the vinegar, start cutting the avocado, the cucumber and the yellow tomato into slices. Chop the parsley into smaller pieces. Now start frying an egg for a few minutes. Spice the egg with salt, pepper and chili flakes according to your personal taste.

Finally top the couscous, which soaked up the rice vinegar with the avocado, yellow tomato and cucumber slices. Also add the yellow baby sprouts and the parsley. Put the fried egg on top and finish the salad off by sprinkling the soy sauce over it.
