Veggie Tofu Skewers with Wasabi Rocket Salad and Cherry Tomatoes

Hey there,

I was soooo thrilled to receive the cook book called “Everyday Super Food” by Jamie Oliver, which I won as a prize on the Foodstand app. The book has sooo many amazing recipes that I directly had to make one with my leftovers in the fridge. I made skewers with grilled tofu, green sweet peppers and zucchini and surrounded them with wasabi rocket salad, cherry tomatoes and garlic sauce with soy sesame. In fact, skewers are sooo good for food leftovers, because you can literally put anything on them. So, get creative with your leftovers ! Once again, the recipe is super easy…which is typical for me as I prefer easy meals 😀 Check out a picture of the deliciousness below:


For this recipe for 2 people you need:

  • 6 skewer sticks
  • 1 zucchini
  • 300 grams of tofu
  • 1 table spoon of oil
  • 1 table spoon of sweet pepper spice
  • 1 tea spoon of garlic spice
  • 1 tea spoon of vegetable spice
  • ½ tea spoon of pepper
  • (edible: chili oil)
  • 1 green sweet pepper
  • 3 hands full of wasabi rocket salad
  • 1 hand full of cherry tomatoes
  • garlic sauce
  • 1 table spoon of soy sesame
  • 1 table spoon of balsamic vinaigrette

First of all, cut the tofu into medium thick slices and put it in a bowl. Add the olive oil, the sweet pepper spice, the vegetable spice, the garlic spice and the pepper to pre-season the tofu. Stir the tofu in the seasoning and let it rest for a while. Next, start cutting the zucchini and green pepper into medium thick slices.

Put the pre-seasoned tofu and the veggie slices on the skewers and start frying them in a pan or on a grill on medium fire for about 15 minutes. I actually added some chili oil to the skewers to make them extra spicy but you don’t have to do that 😉 . During the frying, turn them around a few times to make sure that each side is nicely fried. After they are fried for 15 minutes on medium fire, turn the fire up and grill the skewers heavily until the tofu gets nice and crunchy for another 5 minutes. Once this has happened, they are ready.

Cut the cherry tomatoes in half and lay them out together with the wasabi rocket salad on the plate or wooden board. Sprinkle some balsamic vinaigrette on the greens.

Finally, lay the skewers on the greens and put some garlic sauce on top of them. Sprinkle the soy sesame on top. Instead of garlic sauce you can also use barbecue sauce or ketchup or different self- made salsas, which also taste delish on skewers. Now you can eat !
