Last Friday I posted a picture with Vegan pitas, filled with leftover ingredients that had to go before I left to Germany. Since I love pita breads and döners with their fresh (soy) yoghurt sauces, I felt like sharing the recipe with you guys. Also, they are just super easy and you can make 1000 versions of them with whatever ingredients you like. Check out a picture of them below:
For this recipe for 2 persons you need:
- 4 pita breads
- 400 grams of soy Gyros style chunks (in some supermarkets you can already buy them pre-seasoned)
- 3 medium size tomatoes
- 2 hands full of rocket salad
- ½ cup of pine nuts and dried tomatoes
- 1 cup of soy yoghurt
- 1 table spoon of salad seasoning
- 2 tea spoons of sweet pepper spice
- 1 tea spoon of pepper
- 1 garlic clove
Start cutting the garlic clove and fry it in the pan for 5 minutes. Next, add the soy Gyros chunks and fry them with the garlic for about 10-15 minutes. Put the pita breads in the oven for 10 minutes at 170° Celcius. In the meantime, cut the tomatoes into slices and mix the salad seasoning with the soy yoghurt. After the soy Gyros chunks are readily fried, take them out of the pan. Now in the same pan you can roast the pine nuts and dried tomatoes for about 3 minutes until the pine nuts turn golden brown.
Now, take the pita breads out of the oven and cut them half open to get some kind of a “bag” shape. Fill the soy Gyros pieces inside, followed by the rocket salad and the tomato slices. Now pour the soy yoghurt sauce on top and sprinkle the roasted pine nuts and tomatoes over the pita breads.
