Broccoli – Pearl Barley Fritters with Yoghurt, Lime, Spring Onion and Pomegranates

I also wanted to share the recipe for the Broccoli Fritters, which I just posted on Instagram. My mum once made them and ever since they are one of my fave dishes. They are quick, easy, a budget meal and super good for food leftovers as you can add anything to the fritter mix. Check out a picture oft hem below:


 For a portion for 2 persons you need:

  • 1 broccoli
  • ½ cup of pearl barleys
  • 1 cup of water
  • 2 eggs
  • 2 garlic cloves
  • 1 table spoon of vegetable spice
  • 1 teaspoon of pepper
  • 1 teaspoon of sweet pepper spice
  • 2 tablespoons of spring onions
  • 1 cup of yoghurt
  • 1 table spoon of pomegranates
  • ½ lime
  • (Soy) sesame

Cut the garlic cloves into small pieces and start frying them in a small pot. Once the garlic is fully fried, lower the fire, add the pearl barleys and let them fry in there for 1 minute. Then add the 1 cup of water, the vegetable spice, the sweet pepper spice and the pepper to the barleys and start cooking the barleys for about 5-10 minutes until they have soaked up all of the water. In the meantime, cut the broccoli into very small pieces and let them rest in a bigger bowl.

Once the barleys are cooked, add them to the bowl with the broccoli pieces and add the 2 eggs as well. Start mixing together all the ingredients in the bowl. Once they have become an even mixture, start forming little fritters and fry them in the pan for about 10-15 minutes, occasionally turning them in the pan. In the meantime, cut the spring onions into little pieces.

Once they are fried, place them on the plate and pour the yoghurt on top. Add the spring onion pieces and the pomegranates on top with a little bit of pepper. Finally, squeeze some fresh lime juice on the fritters and sprinkle sesame over them.
