Easter Carrot Cake Bars with Brittle Cream Cheese Frosting

I hope that you are all having a great Easter and a nice weekend in general. Today I want to share the recipe for the carrot cake bars that I posted yesterday. Actually, I got my recipe on a German blog called: schlaraffenwelt.de , which has one of the best carrot cake recipes I have ever seen. I just changed it a little. For this recipe of a full sheet cake you need:

For the cake:

  • 1 baking sheet
  • 200 grams of brown sugar
  • 180 grams of oil
  • 3 table spoons of yoghurt
  • 2 eggs
  • 2 bags of vanilla sugar
  • 250 grams of whole grain flour
  • ½ bag of baking powder
  • 1 table spoon of cinnamon
  • 1 teaspoon of salt
  • 250 grams of carrots
  • 150 grams of crushed walnuts

For the frosting:

  • 300 grams of cream cheese
  • 3 Table spoons of yoghurt
  • 2 bags of vanilla sugar
  • 1 table spoon of agave syrup
  • 2 table spoons of (hazelnut) brittle
  • Edible carrot decor

Start shredding the carrots into small pieces and put them aside. Continue with mixing the eggs, the salt, the oil, the brown sugar, the vanilla sugar, the cinnamon and the yoghurt in a bowl until you get a smooth mix. Next, add the whole grain flour and the baking powder slowly to avoid chunks. Now add the shredded carrots slowly to the mix. Crush the walnuts into smaller pieces and also add them to the cake mix.

Rub a bit of oil on the baking sheet and sprinkle a bit of sugar on the sheet for it to caramelize a little bit. Now add the cake mix on the sheet and let it bake for 30 minutes at 180°C.

In the meantime, prepare the frosting: mix the cream cheese with the yoghurt in a bowl and add the vanilla sugar and the agave syrup until a smooth cream is made.

After the cake is baked, let it cool down for 30 minutes and then add the frosting on top. Last but not least sprinkle the hazelnut brittle on top and the top it with the carrot decoration.
