I wanted to share these quick and easy banana bread bars with you, which I made last night using my banana leftovers. When I came home from work, I found a not so tasty looking smashed brown banana in my bag, which I did not feel like eating raw. So I decided to use it together with my other last banana for a banana bread. For the study focus of this week I added cashew nuts and walnuts to the mix and for the foodporn factor I couldn’t resist to pour sweet potato caramel over it and some popcorn leftovers. For this recipe for 9 small pieces of banana bread bars you need:
a flat baking sheet
– 2 ripe bananas
– 1 egg
– 1 cup of oat milk
– 1 cup of flour
– ½ cup of nuts
– ½ cup of sweet potato caramel
– 1 cup of popcorn
Start mixing the egg and the oat milk in a bowl. Then add the 2 bananas and mash them with a fork into mousse. Mix the mousse with the oatmilk- egg mix. Until it reaches a rather smooth consistency. Now add the flour slowly while stirring the mix. Then fill the mix on the baking sheet and add the nuts on top.
Let the mix bake in the oven for 20 minutes. After it has baked, let it cool down for a while. Once cooled down, cut it into small quadratic pieces and place them on top of each other. Heat up the ½ cup of sweet potato caramel up in the microwave for 30 seconds. Then pour it on top of the cakes and sprinkle the popcorn on top. YUM !
