I also wanted to share the recipe of the super yummy pearl barley salad that I made today. The salad was literally inspired by a look inside my fridge. As I am totally into sweet ingredients in savory meals I also added some fruit to the salad. Check out this meal below:
For this salad for 1 person you need:
- 2 hands full of raw spinach
- ½ cup of pearl barleys
- 1 cup of water
- 1 onion
- 1 big garlic clove
- 2 table spoons of hummus
- Salad seasoning
- ½ cup of blueberries
- 150 grams of tofu
- 1 table spoon of vegetable spice
- A bit of sweet pepper spice, salt and pepper
- Basil oil
- A bit of water and oil
Start with washing the spinach and laying it in a big bowl. Cut the tofu into medium sized slices and start frying it in the basil oil in the pan afterwards. Add sweet pepper spice, salt and pepper. The frying takes about 10 minutes.
In the mean time, cut the onion and the garlic and start frying them in a pot. Once they are fried properly, add the pearl barleys and the water and cook the barleys until they have soaked up all of the water (roughly after 10 minutes). Add the vegetable spice to the mix.
Mix the salad seasoning with the hummus and add the bits of water and oil until the dressing gets a more fluid consistency.
Put the barleys on top of the spinach leaves in the bowl and also add the fried tofu. Top the salad with the bludberries and pour the dressing over the whole salad.
